Princess Diana Oats

You had me at Princess Diana! Growing up in Australia and as part of the Commonwealth, Princess Diana was everything. My mum adored (and still does) making this breakfast and most of my childhood summer mornings included memories of gorging eating this on the way to school. I wasn’t a big eater but the combination of creamy, sweet, fruity and crunch really hits the spot. If it feels elaborate to make don’t be fooled. The night before preparation makes this an absolute breeze.

Ingredients

Rolled oats (not steel cut or quick cook)
Apple Juice
Greek Yogurt
Honey crisp apple grated with the skin on 
Your favorite berries
Toasted almonds

Instructions

The Night Before
Add rolled oats to a bowl
Pour Apple juice into the bowl until the oats are covered
Cover and refrigerate overnight 

In The Morning 
Remove the oats from the refrigerator.
Add spoonfuls of your favorite greek yogurt to the bowl and gently mix
Drizzle your favorite honey over the mixture to taste and depending on whether you used sweet or savory yogurt.
Grate the apple over the oats and stir in. (If you do this the night before the apple may turn brown and collapse slightly.)
Add berries and toasted almonds on top.
